Indian Sweet Curried Coconut Lentils

2C red lentils28oz can diced tomatoes14oz can Lite Coconut Milk1 onion1 tablespoon mild curry powder1 teaspoon ground ginger5 C water1/2 C plain, greek, yogurt (optional, for topping)Chopped cilantro (for topping)*** optionalfor additional spice, add1-2 serrano chilies, mincedred pepper flakescayenne
Mix all ingredients in a large pot. Simmer for about an hour, stirring frequently to prevent sticking. Add more water if necessary to keep a thick/soupy consistency, like chili.
Top each bowl with a 1T dollop of plain greek yogurt, and a sprinkling of cilantro, if desired
