Mini Quinoa "Quiche" Breakfast Cups

Ingredients
2 Cups Cooked Quinoa3 Large Eggs1/2 Cup 2% Milk Shredded Cheddar Cheese2 Tablespoons Grated Parmesan Cheese1/2 Cup Chopped Boar's Head Virginia Ham1/2 Cup Chopped Onion1/2 Cup Chopped Broccoli (or Asparagus, Spinach, etc)
Directions
Combine all ingredients and fill a greased mini muffin tin with mixture. Bake in a pre-heated 350 degree oven for about 20 minutes or until sides are browned and bubbly. Let mini quiches set in tin until nearly cooled. Remove with a fork. Can be kept in refrigerator for a couple days or frozen and then reheated in the microwave, approximately 20-30 Seconds.
