Baked Asparagus Fries

4 sprays olive oil cooking spray1/2 tsp Italian seasoning3/4 TBSP flour1/2 tsp salt1/2 C panko bread crumbs12 spears asparagus1 lg egg white whipped until frothy (almost soft peaks)
Preheat oven to 425. Coat baking sheet with cooking spray. In a small bowl mix Italian seasoning, flour & salt. In 2nd bowl whip egg whites until frothy, place bread crumbs in 3rd bowl. (make sure bowl is long enough to dip the asparagus in or if asparagus is too long cut in half).
Clean asparagus and snap off woody ends. Dredge asparagus in flour mixture and then dip in egg whites and dredge in bread crumbs. Place coated asparagus on prepared baking sheet and repeat with remaining asparagus. Liberally coat asparagus with cooking spray.
Roast, turning once until desired crispness about 10-12 minutes.
