1 pound ground pork or turkey1 small onion, sliced thin2 Tbs. fresh ginger, grated1 clove garlic, minced2 cups coleslaw mix1 tsp. sesame oil3 Tbs. soy sauce2 Tbs. lime juice1 Tbs. Splenda2 tsp. ground coriander1/2 tsp. crushed red pepper
Brown pork and onions in large skillet and drain fat. Add the ginger, garlic and slaw mix; stir-fry fr 2 minutes until veggies have wilted. Meanwhile combine the remaining ingredients in a small bowl, then add to the skillet. Cook and stir for one minute. Spoon the meat mixture into lettuce leaves and roll up and eat.
