Ingredients
6 eggs1 cup 2% milk (you can use skim)1 cup all purpose flour1/4 tsp Himalayan salt (you can 1/2 the salt or eliminate if you like)
Directions
Preheat oven to 425. Spray cupcake pans with a no-stick cooking spray (or use beef drippings but that adds calories). Mix the eggs and milk together, add flour and salt, stir just enough to blend. Do not over mix. Batter will be lumpy. Pour batter in cupcake pans. Makes approx. 12-18 puddings depending on how big you like them. I do 12.
