Tropical Seafood Salad

Ingredients
500g White Fish Fillets500g cooked shrimp (prawns)1 Mango (cheeks sliced thickly)1 Peach (Sliced)2 Large Kiwi Fruit (peeled and sliced thickly)2 Shallots (sliced finely)Lettuce Leaves1 tsp Tabasco Sauce1/2 cup Low Fat Mayo1/2 cup Tomato Sauce1/2 cup White Wine
Directions
Poach fish fillets in wine, in a heavy based pan for 5 minutes or until fish is cooked. Drain.

Combine Sauce, Mayo and Tabasco to make dressing.

Place Kiwi, Shallots, Peach, Mango into a large bowl. Add fish and shrimp. Add Dressing and stir through gently until covered and fish has broken up into small pieces.

Serve on top of Lettuce leaves arranged on a plate and enjoy.
