Skinny Orange Muffins

Ingredients
Flour, white, 1.66 cupGranulated Sugar, .33 cup Stevia 6 packetsBaking Powder, 1 tsp Salt, 1 tsp Coconut Oil, .33 cup Oikos Organic Greek Yogurt, Plain, 5.5 ozMilk, nonfat (skim milk), .33 cupEgg, fresh, whole, raw, 1 largeOrange Zest 1-TbsOptional Glaze:2 Tbls fresh orange juice1 cup powdered sugar1 Tbls orange zest
Directions
Instructions
Preheat oven to 350F.
Line muffin tin with baking cups or spray with nonstick cooking spray.
Combine flour, sugar, Stevia, baking powder and salt in a small bowl. Set aside.
Whisk together coconut oil, Greek yogurt, milk, egg and one tablespoon of orange zest together in a medium bowl.
Stir in flour mixture just until moistened.
Divide batter evenly among muffin cups.
Bake for 16-20 minutes or until just golden brown. Cool in pan for several minutes before removing.
Optional Glaze
Combine orange juice, powdered sugar, and glaze in small bowl. Mix until smooth.
Drizzle over muffins a few minutes after removing from pan.
