1tsp coconut oil1tsp olive oil1 med onion, chopped2 cloves garlic, chopped or crushed57g leek, thinly sliced54g carrot, diced68g courgette (zucchini), large diced88g parsnip, diced103g cauliflower, in florets74g aubergine (eggplant), diced66g orange pepper (bell pepper), diced6 cherry tomatoes, halved64g mushrooms, quartered2tsp garam masala2tsp ground turmeric225g Real Organics Authentic Korma sauce
Heat olive oil and coconut oil in a large pan over a medium heat.
Fry onions and garlic.
Add all other vegetables, cover pan and cook on a low heat for 10 minutes
Add spices and korma sauce.
Cover and simmer for 20 minutes, or until the vegetables are of the desired consistency
Check consistency. If a little too thick, add some water.
