1 tbsp extra-virgin olive oil2 pounds boneless, skinless chicken breast, cut into 1-inch pieces3/4 tsp salt3/4 tsp dried Italian Seasoning1/2 tsp black pepper1 12-ounce package cooked Italian-style chicken sausage1 pound pre-cooked, refrigerated potato wedges2 bell peppers, seeded and cubed2 garlic cloves, chopped1/4 cup bottled Italian salad dressing
Start to Finish 30 minutes
In a nonstick skillet, heat oil over medium-high heat. Season chicken with 1/4 tsp each of the salt, Italian seasoning and black pepper. Saute chicken for 5 minutes, stirring occasionally.
Cut sausage into 1/2-inch pieces. Add to skillet along with potatoes, peppers and garlic. stir in remaining 1/2 tsp salt, 1/2 tsp Italian Seasoning and 1/4 tsp pepper. Add Italian dressing, stir. Cover skillet; cook over medium-high heat for 15 minutes, stirring occassionally. Remove from heat; let stand for 5 minutes.
