Baked Oatmeal3 cups rolled oats½ cup brown sugar2 tsp baking powder½ tsp salt1 tsp cinnamon2 eggs1 cup unsweetened applesauce1 cup milk3 tbsp butter, melted1 tsp vanilla1 chopped apple (skin on, chopped about the size of chocolate chips)1/2 cup craisinsTop with Streusel1/2 cup oats1/4 cup flour (omit and add oats for gluten free)1/2 tsp cinnamon1/4 cup brown sugar1/2 stick butter
Line muffin tin with paper liners, spray liners with nonstick spray. Set aside.
In a large mixing bowl, combine rolled oats, brown sugar, baking powder, salt and cinnamon. Set aside.
In another mixing bowl, combine eggs, applesauce, milk and vanilla and whisk thoroughly.
Pour wet ingredients into dry ingredients and mix until JUST sticky throughout, add apples and craisins and mix in just slightly until mostly even. Overmixing makes flat tough muffins.
Scoop batter into prepared muffin tin.
Put all ingredients for Streusel in one bowl, mash together with a fork, adding more butter if needed. Add a few craisins to the mix, and sprinkle on top of muffins before they go in the oven. Lumpy/crumbly is fine.
Bake at 375°F for 30 minutes.
