Honey Oatmeal Raisin Cookies

Ingredients
1/4 cup sugar1/2 cup butter3/4 cup honey1 Tbsp. light olive oil1 large egg2 1/4 cups whole wheat pastry flour ( I like to substitute 1/2 cup of regular whole wheat flour for extra texture.)2 Tbsp. ground flax seed1 tsp. cinnamon1/2 tsp. nutmeg1/2 tsp. baking soda1/2 tsp. salt2 cups rolled oats ( I prefer regular not quick)1 cup raisins
Directions
Preheat oven to 375 degrees.
Wash raisins and let stand in water.
Cream sugar and butter.
Warm honey in microwave so that it is runny, but not hot.
Add honey, egg, and olive oil to creamed sugar and butter and beat well.
Sift together flour, cinnamon, nutmeg, salt and baking soda. Stir in ground flax seed.
Stir dry ingredients into creamed mixture.
Drain raisins well and add to batter.
Stir in rolled oats.
Spray or lightly grease cookie sheet.
Drop batter by teaspoonfuls on cookie sheet.
Bake in a 375 degree oven for about 10 minutes or until lightly browned. Do not over bake.
Makes 36 cookies.

    I made these cooking minus nutmeg and flax seed. I don't know how that affected the outcome but I found these cookies rather bland. They were not as moist as I like my cookies to be. I doubt that I will be making these again. - 9/27/08

    yummm!!! i LOVE that these are made with honey! i added some walnuts, dried cranberries and shredded coconut. i will definately make these again! - 6/8/08
