Lentil stew

Ingredients
1 C Lentils1 med Onion1 Green Pepper1 C chopped carrot1 C chopped celery1 C chopped radish1 C Ketchup1 T coconut oil4 C waterSalt and pepper to taste
Directions
saute vegies in coconut oil on high heat until onions are translucent. Add lentils and 2 T of the ketchup. Stir together and cook until lentils start to wrinkle a bit. (about 2 minutes). Reduce heat and add half of the water. Simmer 30 minutes, stirring occasionally. Add the rest of the ketchup and 1 cup of water. Stir to combine and continue simmering for 15 to 20 more minutes, until lentils are soft. Sauce should be thin to medium constancy. Add more water if thinner sauce is desired. Add salt and pepper to taste.
