Egg Frittata Muffins

Ingredients
2.5 cups Egg Beaters1/3 cup finely chopped Onion1/3 cup chopped red bell pepper1/3 cup chopped zucchini or yellow squash1/3 cup chopped mushrooms1/2 tsp salt1/4 tsp pepper1/4 garlic powder1/2 cup fat free shredded Cheddar Cheese

DIRECTIONS
In a bowl, beat the eggs. Add veggies,salt, pepper and garlic powder. Stir in cheese.
Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350 degrees F for 20-25 minutes or until a knife inserted near the center comes out clean. Makes 12 muffins for 6 servings. You can refrigerate and just nuke them for 30 seconds for a healthy grab and go.

    Made mine with egg whites to save on sodium. Sometimes, I make this in a cast iron skillet to save prep time. Tastes the same, but I have to put it into a dish to travel. With the muffins, you can eat them with your fingers on the way to work! - 1/30/11
