Peach Bran Muffins

1 1/4 Cup Whole Wheat Flour3/4 Cup Bran Cereal, crushed (I used Post Bran Flakes, All Bran with Extra Fiber is good too)1/6 Cup Sugar (you can use more if you like them really sweet)1 Teaspoon Baking Soda2 Teaspoons Baking Powder1 Cup Fat Free Plain Yogurt1 Egg, large (or 2 egg whites)1 Teaspoon Vanilla Extract1 Large Peach (fresh, diced)
1. Combine the flour, bran, sugar, baking soda, and baking powder and mix well. Add the yogurt, egg, and vanilla extract and stir just until the dry ingredients are moistened. Fold in the peaches.
2. Coat large muffin cups with nonstick cooking spray, and fill 3/4 full with the batter. Bake at 400 degrees for 16 to 18 minutes, or until a wooden toothpick inserted in the center of a muffin comes out clean.
3. Remove the muffin tin from the oven, and allow it to cool for several minutes before removing them from the tin. Serve warm or at room temperature.

Made them with blueberries, good! I used brown sugar, and these are not sweet, more like a bread. ? on instructions: on bran cereal-crush the cereal, then measure 3/4 c or or measure 3/4 c cereal then crush and use? I did the former. Came out ok though a little dense. Thanks I'll use this again. - 7/9/10

I used plain Greek yogurt and the batter seemed really dry while, but they came out ok. I used the 50/50 Sugar/Truvia mixed sugar and guessed on the amount - 1 Tbsp - but it needed more. All in all, a little bland, but were good w/ some butter. I'd try again. Two muffins/serving is worth it! - 8/14/12
