Peach Bran Muffins

Ingredients
1 1/4 Cup Whole Wheat Flour3/4 Cup Bran Cereal, crushed (I used Post Bran Flakes, All Bran with Extra Fiber is good too)1/6 Cup Sugar (you can use more if you like them really sweet)1 Teaspoon Baking Soda2 Teaspoons Baking Powder1 Cup Fat Free Plain Yogurt1 Egg, large (or 2 egg whites)1 Teaspoon Vanilla Extract1 Large Peach (fresh, diced)
Directions
1. Combine the flour, bran, sugar, baking soda, and baking powder and mix well. Add the yogurt, egg, and vanilla extract and stir just until the dry ingredients are moistened. Fold in the peaches.

2. Coat large muffin cups with nonstick cooking spray, and fill 3/4 full with the batter. Bake at 400 degrees for 16 to 18 minutes, or until a wooden toothpick inserted in the center of a muffin comes out clean.

3. Remove the muffin tin from the oven, and allow it to cool for several minutes before removing them from the tin. Serve warm or at room temperature.

    Instead of sugar, you could use applesauce. You'll get the sweetness without the sugar aspect. Just a general hint...if a recipe calls for oil (veggie oil), you can substitute applesauce (equal substitute).

    These made 8 for me - used 3/4c 2% yog, 1 TB oil, 2TB brownsugar. I would probably have eliminated the tsp of baking soda, they taste of it too much. Otherwise, good! - 8/22/11

    Made them with blueberries, good! I used brown sugar, and these are not sweet, more like a bread. ? on instructions: on bran cereal-crush the cereal, then measure 3/4 c or or measure 3/4 c cereal then crush and use? I did the former. Came out ok though a little dense. Thanks I'll use this again. - 7/9/10

    I used plain Greek yogurt and the batter seemed really dry while, but they came out ok. I used the 50/50 Sugar/Truvia mixed sugar and guessed on the amount - 1 Tbsp - but it needed more. All in all, a little bland, but were good w/ some butter. I'd try again. Two muffins/serving is worth it! - 8/14/12

    I found the texture to be rather spongy. I think I will try them again with a tablespoon or two of a healthy oil or try the applesauce alternative. We thought they also needed a little salt. I will try again for some tweaking. - 7/15/10

    I made these today, did not have plain yougurt, used Orange Creamsicle flavor that I had in fridge. Also used Splenda instead of sugar. I love these muffins! I will use this recipe with other fruits also, very yummy. I made regular cupcake size, bake 15-16 minutes. - 8/16/10
