Butternut Squash and Black Bean Taco Filling

Ingredients
1/2 onion, choppped1 can black beans, drained and rinsed3 garlic cloves, minced1/2 cup fire roasted diced tomatoesolive oil Fajita Seasoning to taste
Directions
Heat olive oil in pan
Add onion, garlic, fajita seasoning,butternut squash, black beans, and tomatoes.
Simmer for 25 - 30 minutes or until butternut squash cubes soften.
Eat in a taco, over pasta or rice, or by itself
