Baked Blueberry Cheesecake Oatmeal

1/2 cup plain non fat yogurt4 large egg whites1 teaspoon pure vanilla extract1 cup old fashioned oats4 teaspoons packed brown sugar, divided1 cup fresh blueberries, washed1/2 cup cottage cheese
Preheat oven to 350 degrees and grease an 8x6 casserole dish.
Using a stick blender, whip up the egg whites, yogurt, and vanilla until fluffy.
Add the oats, baking powder, and 2 teaspoons of the brown sugar. Mix well.
Place half the oat mixture into the bottom of the greased casserole dish.
Spread the cottage cheese over the oat mixture. Place about 2/3 cup of the blueberries on top of the cottage cheese.
Cover the cottage cheese and the blueberries with the rest of the oat mixture, the remaining few blueberries, and sprinkle 2 teaspoons brown sugar on top.
Bake at 350 degrees for half an hour.
Remove from oven and let sit for ten minutes before serving.
Serving Size: Makes 4 servings if baked in an 8x6 casserole dish
