Coconut Rice

Ingredients
1 cup shredded coconut1 cup chicken or veg. broth1 1/2 cup water1 cup white rice
Directions
1. Toast coconut in saucepan on medium heat, stirring constantly once it starts to brown. Toast until golden brown throughout. Reserve 1/2 for garnish.

2. Add broth, water, and rice to remaining coconut and bring to a boil.

3. Reduce heat to medium low and simmer, covered, for 15 minutes. Fluff with fork when done and top with the rest of the coconut.

Tips ~
This does re-heat well. You may want to add a sprinkle of water, and keep the garnish separate until heating.

Also great with a little lime zest / juice.
Top with sauteed veggies & meat for a meal.
