1 8 oz. pkg. nuefchatel cheese, softened1 14 oz. can sweetened condensed milk1 tsp. vanilla extract1/3 c. lemon juice1 can cherry pie filling1 graham cracker crust
Place the cheese, sweetened condensed milk and vanilla in the blender jar. Process until smooth and well-blended. Continue to process and slowly add in the lemon juice. The lemon juice will make the filling start to set up. As soon as the lemon is mixed in, stop the blender and pour filling into crust. Cover with plastic wrap or lid from the pie crust. Refrigerate. Spread pie filling on top about 20 minutes before serving. Keep chilled.
