Healthier Pumpkin Zucchini Bread Muffins

3 Large Egg Whites (or 1.5 whole Egg)1/2 Cup Sugar1 Cup Applesauce1/2 Cup Melted unsalted butter1/2 Cup canned pumpkin1/2 TBS vanilla extract1/2 TSP baking soda1/4 TSP baking powder1/4 TSP ground cinnamon1/4 TSP Nutmeg1/4 TSP All Spice (or ground cloves)1/2 Cup Shredded Zucchini1/2 Cup Chopped Walnuts (optional)
Heat oven to 350F
Lightly beat egg whites and add sugar
Add pumpkin and vanilla
In a separate bowl, combine all dry ingredients
Gradually mix in dry ingredients to the wet mixture
Add shredded Zucchini and stir
Add Walnuts and stir
Line cupcake pan with cupcake liners and fill 2/3 of way
Cook 20 Mins and test with toothpick
Enjoy!
