Potato Cheddar Soup

About 3 lbs of potatoes peeled and cubed (about 12 med potatoes)8 oz of Cabot Vermont Sharp Cheddar grated2 medium raw onions chopped2 TBSP vegetable oilfresh chivestsp salt + to taste5 cups water
Cook the onions in the vegetable oil, till translucent.
Add in the water, tsp of salt, and potatoes. Bring to boil then turn to simmer and cover.
Once the potatoes are tender mash or puree to taste. Then add the cheese slowly and mix it in. Then remove off the heat and add the chives.
Ladle out and enjoy!
Serving Size: Makes about 6 bowl size servings (2 ladles worth/ bowl)
