Almost Vegan Mozzarella-Eggplant-Spinach Quiche

Ingredients
Spinach - Dole Baby Spinach, 3 oz Mushrooms, fresh, 2 cup, pieces or slices Garlic, 2 clove mincedExtra Virgin Olive Oil, 2 tbsp Almond Breeze Almond Milk, Original, refrigerated, 2 oz Go Veggie - Vegan Mozzarella Flavor Shreds, 1/4 cup Water, tap, 1/2 cup (8 fl oz) Eggplant, fresh, 1 cup, cubes Keebler graham cracker ready crust - reduced fat, 1 crust Egg whites, Egg Beater Liquid Egg Whites, 5 servings

Directions
1. Preheat oven to 375
2. Sautee garlic and mushrooms in olive oil (If using fresh spinach, throw that in as well)
3. Whisk almond milk and egg beaters until smooth
4. Add remaining ingredients to the egg mixture and stir briefly
5. Pour into pie crust
6. Sprinkle about a teaspoon of mozzarella over the top
7. Bake at 375 for 25-30 mins - quiche is done when knife inserted in the center comes out clean.
