Steamed Mixed Vegetables

Ingredients
1 head cauliflower, cleaned and chopped into florets1/2 red onion cut into wedges4 carrots, cleaned and sliced2 cups fresh snow peas, cleaned1 bunch scallions, cleaned and cut into 4 inch strips2 tbsp extra virgin olive oil1/8 c. white winesalt & pepper to taste
Directions
Heat the oil over medium heat in a large, deep pan. Add the cauliflower, onion and carrots and saute for about two minutes. Add the scallions and snow peas and mix well. Add white wine, cover and reduce heat to low. Steam/simmer for 5 minutes or until cauliflower is soft but not mushy.
