Granola by Ina Garten

Ingredients
Oats Old-Fashioned Rolled Oats, 4 cup Coconut, sweetened, 2 cup Almonds - sliced, 2 cupsCoconut Oil, 3/4 CupHoney, 1/2 cupApricots, dried, 1.5 cup, or any dried fruit*Dried Cherries, 1 cup or any dried fruitCranberries, dried, sweetened (craisins), 1 cup Dry Roasted Cashews, 1 cup
Directions
Toss the oats, coconut and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir until all the oats and nuts are coated. pour onto a large sheet pan (I used two). Bake stirring occasionally with a spatula until the mixture turns a nice, even golden brown. About 30-45min.
Remove from oven and allow to cool, stirring occasionally. Add dried fruit and cashews. Store the cooled granola in an airtight container.
