1 cup creamy peanut butter1/2 sugar (original recipe 1 cup)1 large egg1/2 cup chocolate chips- additional sugar to roll cookie in before baking (optional)
- Preheat oven to 350 degrees.
- line 2 baking sheets with parchment paper
- mix peanut butter, egg, and sugar
- stir in chocolate chips
- roll into 24 balls (roll in additional sugar, if desired)
- bake 6-8 minutes until bottom looks a little brown around edge, and top looks a bit set
- let sit on baking sheet for 1-2 minutes, carefully remove to wire rack to cool completely
