Zucchini Soup with just onion, cream cheese and chicken broth

Ingredients
2 cups zucchini (can use asparagus, mushrooms or any other vegetable)1 onion diced2 tbs cream cheese1 -2 cups or more of chicken broth depending on how thick you like your soup
Directions
Saute vegetable of choice with diced onions
Pour into blender - I used a Vitamix
add 2 tbs of cream cheese
and slowly pour in 1 - 2 cups of chicken broth
pulse blend for 30 seconds to a minute dependent upon how chunky you like your soup

Serving Size: makes 3 1 cup servings
