1 tsp. black mustard seeds3 bay leavesone shallot3 cloves garlic4 tablespoons sesame oil2 cups red lentils2 tsp Indian spice mix (less or more to taste)6 cups water1 can petite diced tomatoes
Pour sesame oil into heated wok.
*As oil heats, add black mustard seeds and wait 'til they burst
*Add the shallots and garlic and cook slowly til slightly brown
*Add the bay leaf, lentils and spice mix. Stir until lentils are coated with the spice mix
*Add water; bring to boil,then lower stove heat, cover and cook for thirty minutes until lentils are mushy
*Add tomatoes; cook for 15 minutes or until tomatoes are completely incorporated into the lentils
