Almost Paleo Cream of Broccolli sop

Ingredients
Directions
8 cups chopped broccoli (I put in about 2 cups stems)2 Tbsp Olive Oil2-3 cups water4 cups unsweetened almond milk1 cup shredded cheesesalt, pepper, and garlic to taste.
Put all stems and enough crowns for about 6 cups of broccoli in large soup pot.
Sprinkle over olive oil and braise until starting to brown
Add water and simmer until soft
blend with a hand blender until smooth
Add Almond milk, cheese and cornstarch and remaining broccoli.
Cook until desired thickness.
Serving Size: makes about 8 cups of soup
