Ingredients
2 skinless chicken breasts ( cubed)2 large potatoes ( peeled and cubed )2 Carrots ( peeled and sliced1 large onion ( thickly sliced )1 red pepper ( sliced )1 stick of celery ( sliced )1 tsp low salt 1tsp black pepper2 cups of chicken stock
Directions
Put all engredients into a large casserole dish
add herbs of your choice ( I use oregano )
I also add a dash of worcester sauce for extra spicy kick.
Cover with lid and cook at 180c for 90 mins. or until chicken is well cooked and vedgetables are tender. Serves 4.

    Made this and there is so much stock left over, I made rice and added to the leftover liquid and voila- chicken rice soup! My kids liked the soup more than anything. - 8/11/11

    Serve with stuffing and it becomes Sunday dinner! I left out the celery and red pepper, sliced (instead of cubing) the chicken into strips, and it was great! - 4/29/08
