Peanut Malt Granola

Ingredients
150g (barley) malt syrup100g molasses100g chunky peanut butter, no added sugar75ml canola oildash vanilla extract250ml semi-skimmed milk (2% milk)400g oats100g wheatgerm150g pumpkin seeds75g sunflower seeds
Directions
Makes 15 x 0.6 cup servings. Omit oil OR peanut butter for a lower calorie version.
1) Pre-heat oven to 300ºF/150ºC
2) Gently heat the first six ingredients in a pan, stirring until a runny, well-combined consistency is reached.
3) Mix the remaining ingredients in a large bowl.
4) Pour the liquid ingredients into the bowl and stir well. You may need to add more oats or wheatgerm, depending on how well they absorb the liquid.
5) Leave the mixture to sit for 10 minutes
6) Spread the mixture onto lined/non-stick baking trays and place in the oven.
7) After 20 minutes, take out the trays and stir the mix.
8) Continue cooking for another 10-25 minutes, checking the mixture every 10 minutes, until the mixture is almost completely dry and lightly browned.
9) Leave to cool on baking trays - the granola will harden further as it cools.
