Cabbage Veggie Stew

Ingredients
1-48 oz Can Vegetable Juice Cocktail (V8) +1 can of water1 large head of cabbage chopped5 large carrots chopped1-28 oz can Diced Tomatoes5 Celery stalks2 cups frozen corn kernels16 oz bag frozen broccoli/cauliflower mix6 small yellow potatoes1 cup sliced mushrooms2 large bell peppers chopped1 large onion chopped
Directions
Place all ingredients in a very large pot, bring to a boil, then let simmer on med-low heat for 30 min to an hour. Or throw everything in a crock pot cook on high for 4 hours or low for 8 hours. Makes 15 servings
