Spicy One Pot Chicken and Pasta

1 tbsp olive oil2 cloves garlic, minced1/2 sweet onion, finely chopped12 oz boneless, skinless chicken breasts2 cups swanson's natural goodness chicken broth1 (14.5 oz) can rotel with lime and cilantro, with liquid1/2 cup 1% milk8 oz dry elbow macaroni salt and ground black pepper to taste (not much needed)4 oz 2% velveta, diced
heat olive oil in a large skillet over medium high heat. add onion, garlic, and chicken. saute until lightly browned.
stir in chicken broth, rotel, milk, and pasta. season with salt and pepper. bring to a boil. cover, reduce heat, and simmer until the pasta is cooked through and most of the liquid is cooked out. (12-14 mins)
remove from heat. stir in cheese. cover and let cheese melt. (2 min +/-) serve immediately.
