Creamy Fiesta Lime Chicken

Ingredients

1 C. Water1/3 C. teriyaki sauce1/2 C. lime juice3 cloves minced garlic1 t. liquid smoke1/2 t. salt1/4 t ground ginger6 raw skinless boneless chicken breasts1/4 C light mayo1/4 C light/fat free sour cream2 T. chunky salsa1 T. skim/fat free milk1 t. blackening spice/red cayenne pepper1/4 t. hot sauce1/4 t. dill weed3/4 C. lowfat cheese
1. whisk the first eight ingredients together well, place in plastic zip bag and marinate chicken for 45 min.
2. whisk the next 7 ingredients together and refrigerate until ready to serve.
3. grill marinated chicken for 10-15 minutes or until cooked
4. brush with dressing(mayo mixture) and sprinkle with cheese broil until cheese is melted.
5. serve with baked tortilla strips
makes six servings (chicken breast should only be the size of your wrist)
