4 boneless pork chops1 Tbsp. vegetable oil1 med. onion, chopped1 cup chicken broth3 Tbsp. grape jelly1/4 teaspoon ground ginger4 1/2 teaspoons cornstarch3 Tbsp. cold water
In a skillet over med. heat, brown pork chops in oil; drain. Remove chops from pan. Set aside. Add onion to the same skillet and saute until tender. Return chops to skillet with onion. Pour broth around chops; bring to a boil. Reduce heat; cover and simmer for 12-16 minutes, or until meat is tender. Remove chops and keep warm. Whisk jelly and ginger into broth. Combine cornstarch and water until smooth; add to simmering broth, stirring constantly until thickened. Serve sauce over pork chops.
