K. Broccoli Casserole

Ingredients
2 tbsp. olive oil 1 onion, diced1cup celery chopped2 cups broccoli chopped1 can of cream of broccoli soup1 can of 2% milk2 cups shredded cheddar cheese, divided1/4 tsp. sal & pepper2 cups cooked white rice
Directions
Preheat oven to 400 degrees. In a small pan over medium heat, cook oil, onions & celery until tender ( 10-15 minutes). In a large bowl, stir broccoli, broccoli soup, milk, 1 1/2 cups of shredded cheese, salt, pepper & rice. Add cooked onions & celery. Mix well. Pour into a 10" greased corrning dish. Top with remaining cheese. Bake 30-35 minutes or until bubbly. Makes 8 servings.
