Cheddar "Chicken" Broccoli Cornbread Muffins

Ingredients
1 cup cornmeal3/4 cup flour1 tbsp baking powder1/2 tsp salt1 tbsp sugar-------1 egg1 cup skim milk1/4 cup margarine (melted)-------1/2 package of Yves Chicken Strips (or similar, approx 1/3 cup diced), cooked1/6 cup diced broccoli (steamed but not soggy)1/4 cup shredded cheddar cheese
Directions
Preheat oven to 400°F. Oil muffin tin and set aside.

Sift together dry ingredients into a bowl. Add egg, milk and butter and mix until smooth. Do not overmix.

Mix (pre-cooked and cooled) soy chicken and broccoli. Mix in most of the cheese.

Fill tin with approx. 2 tsp of batter, then add cheese mix. Add another 2 tsp of batter and sprinkle the tops with remaining cheese.

Place muffin tray in oven and bake for 15-20 minutes.

Serving Size: Yields 1 dozen muffins.
