Vegetarian Minestrone Soup

Ingredients
2 cups Vegetable Broth1 Cup Water2 cans or 2 cups Low Sodium Red Kidney Beans2 cans or 2 cups Great Northern Beans1 Family Size Frozen Mixed Vegetable (10oz.)1 cup chopped Onion2 cup sliced Squash - Yellow and Green2 minced cloves of Garlic1 cup Spinach1 large can Diced Tomato or 3 cups freshly Diced Tomato1/2 cup Tomato Paste or small canSeveral fresh Basil Leaves1 tsp Oregano2 tsp Season Salt1 tsp. Fresh Ground Pepper
Directions
Combine all ingredients and bring to a boil. Reduce heat to low heat, and simmer for 1 hour. Garnish with a sprig of fresh basil, salt and pepper to taste. Goes great with fresh baked garlic bread.

Serving Size: Makes about 6 quarts or 25 one cup servings.
