Coconut Curry Stew

Coconut Oil, 15 gramsOnions, raw, 1.5 cup, chopped Garlic, 1 clove Cauliflower, raw, 2 cup chopped Chicken Broth, 4 cup Curry powder, 1 tbsp *Cumin seed, 1 tsp Chicken Thigh, 425 grams *Kos Aqua Coconut Milk (full fat), 400 ml 1 can
saute onion in coconut oil, cook 4-5 minutes
add garlic, cook some more
add cauliflower, repeat
add spices, saute a minute or so, mixing good
add broth (I make my own from when I boil the chicken thighs)
add 3 cups of chopped, or shredded chicken (approx. 425 gms)
add can of coconut milk and cook until warm
salt and pepper, add coconut flakes or cilantro or enjoy as is.
Serving Size: Makes 5 approximately 2 cup servings
