1 medium white onion2 tbl olive oil1/2 cup lemon juice2 tbl vinegar2 cup chicken broth2 tbl cornstarch5 tbl or 3 oz tomatoe paste3 tsp sugar32 oz almond milk9 oz of salmon cut in small pieces10 med shrimp cut in small piecesYou can substitute whatever seafood you prefer just check calorie count.
Heat olive oil, chop onion and add to olive oil. Cook until translucent. Stir in lemon juice, vinegar, sugar and 1/2 cup chicken broth. Cook until reduces about half, mix cornstarch in 1/4 cup broth. Stir into heated mix until it thickens. Add tomatoe paste stir well. Add almond milk and seasonings. Cook on low about 10 min stirring often. Add seafood cook additional 5 minute.
