Toasted Almond Chicken Salad

Ingredients
*Best Choice Boneless Skinless Chicken Breast (frozen), 16 oz Celery, raw, 4 stalk, medium (7-1/2" - 8" long)Fresh Chives, 1 tbsp choppedDannon All Natural, Plain Nonfat Yogurt, 6 oz., 6 oz *Daisy Light Sour Cream, 6 tbspAlmonds, .3 TBS, slivered Toasted
Directions
Makes 4 Servings

1. Spray Skillet with Cooking Spray; Heat over Medium-High heat. Cook Chicken 4 Minutes on each side or until chicken is no longer pink when centers of thickest peices are cut. Remove from heat and let chicken stand at least 10 minutes until cool enoug to handle. Chop Chicken into small peices.
2. In large bowl, Mix chicken and remaining ingredients . Serve on a bed of Mixed Greens.

    I will make this again, but I will change the seasonings, I found the tarragon to be too strong. It is nice and filling on a tossed salad. - 1/7/09
