Carrot Oatmeal Protein Breakfast Cookies

1.50 tsp Cinnamon, ground 0.25 tsp Pumpkin Pie spice 1.25 tsp Vanilla Extract 2 small (6" to 6-7/8" long) Banana, fresh 0.50 cup, chopped Carrots, raw 0.25 cup, chopped Pecans 1.50 cup Oats, Quaker 0.25 cup Cranberries, dried, sweetened (craisins) 15 gram(s) Coconut, flake, sweetened 0.25 cup stevia for baking2 serving EAS Soy Protein - Vanilla - (1 scoop)
Preheat oven to 350. Line a baking sheet with parchment paper.
Mash bananas; mix in shredded carrot, then stevia. Mix in protein powder and then add rest of ingredients except for oats. Mix in oats when other ingredients are all mixed. Wet fingers and scoop onto baking sheet in about 1/4 cup scoops, flatten into a cookie shape.
Bake for 18-20 minutes. Let cool. Store in an airtight container in the refrigerator.
Serving Size: Makes 12
