Banana Stuffed French Toast Sandwiches

6 Eggs 1/4 cup Milk 4 Very ripe bananas 1/8 tsp Fresh grated nutmeg 8 slices bread 4 tbs Butter Confectoners sugar for dusting Maple Syrup for serving
In a large Shallow bowl, using a fork beat eggs until light and frothy.Stir in milk and set aside.Peel bananas into a small bowl and mash them with a fork. Stir in nutmeg

Spread the banana mixture over 1/2 of the bread slices, leaving a 1/4 inch border uncoved on all edge.Top with the remaining bread slices, press down gently and seal.
Place two sandwiches in the egg mixture and press down gently. Turn over and let soak for a moment until evenly saturatedon both sides Repeat with other 2 sandwiches.
In frying pan or griddle melt two Tbs of butter. Fry un til golden brown about 2 min on each side.
Dust with confectoner sugar and Serve with syrup.
