Ingredients
2 Cups Unsweetened Applesauce1 Cup Granulated Sugar2 Eggs2 Ripe Bananas (medium to large)1 Cup Wheat Germ1/2 teaspoon Baking Soda1 1/2 Cups Whole Wheat Flour1/4 teaspoon Salt2 teaspoons Vanilla
Directions
mix all ingredients until well blended. pour entire mixture into greased bread pan or pour into greased muffin cups. makes about 14 muffins. bake at 350 for about 1 hour for a loaf or about 20 min. for muffins.

    These were very good. I made slightly larger muffins because I only have twelve tins and didn't use quite all of the batter. I baked them about 23 min. I think next time I am going to aim for 25-27 min. though. I will definitely make this again. Very tasty! - 8/4/08
