Quinoa Spinach Casserole

1/2 cup quinoa1 16-oz. bag frozen chopped spinach, thawed4 oz. feta cheese, grated or crumbled1 cup 1% cottage cheese1 cup nonfat egg substitute2.5 tablespoons flour1 tsp paprika
Preheat oven to 350 degrees
Cook quinoa in 1 cup water. Bring to a boil, then lower the heat and simmer for 15 minutes. Fluff with a fork.
Squeeze moisture from thawed spinach. Mix in large bowl with feta and cottage cheese.
In a medium bowl, beat egg substitute about 1 minute, then add flour and paprika and beat another minute.
Combine egg mixture with spinach and cheeses. Transfer to an 8 X 8, 9X9, or comparable baking dish that is coated with non stick spray.
Bake at 350 degrees for 30 minutes or until set.
Makes 8 servings.

I've had a box of quinoa for a few months; I had just ran out of ideas on how I could use it to prepare a tasty dish. This receipe sounds like the perfect opportunity to use the quinoa on. I like spinach...I like festa..I'm going shopping and plan on preparing it this weekend. Thanks! - 5/17/08
