Bananas Foster Chimichanga

Ingredients
Banana, fresh, 2 medium (7" to 7-7/8" long), slicedI Can't Believe It's Not Butter, Light Spread (Soft), 1 TbspBrown Sugar, 2 tsp packed cinnamon, 1 tspRum, .5 fl oz (optional)Flour Tortillas, 2 tortilla (approx 7-8" dia)
Directions
Place bananas, butter spread, cinnamon and brown sugar in small saucepan. Heat just until butter is melted. Add rum if desired. Soften tortillas slightly, then place about 1/4 cup of banana mixture in middle of tortilla. Leave some mixture to pour over top of chimichanga. Fold tortilla from all ends, pin with toothpick. Fry tortillas carefully using non-stick spray until golden brown. Remove toothpick then pour little banana mixture over tortilla. Slice each tortilla in half for one serving. Serve with lowfat ice cream, if desired.

    I have to try this. I was making something similar last year and using S/F syrup with the bananas but was trying to get at something like this.....I'll post after I make it, it sounds awesome! - 5/26/08
