Cream Cheese "Swedish" Pancakes

Ingredients
8 oz Cream Cheese (room temperature or microwaved about 20 seconds until soft)8 eggs (warm them in a bowl of warm water before cracking them)2 tsp Vanilla Extract pinch salt (optional)butter, coconut oil, or bacon fat for frying
Directions
In a blender combine the softened cream cheese, warmed eggs, vanilla, and salt (if using salt - note: I first tried 1/4 teaspoon but it was too much). Let rest in the blender 5 minutes or more to let the bubbles dissipate. (Maybe you could make this the night before.)

Fry on greased skillets with about 8 " bottoms, heated over medium heat (a little lower heat than regular pancakes). Use 1/3 cup per pancake. Let fry gently until the top gets a little drier before turning. These can be a bit tricky to turn, but if they break just tell people they are "scrambled pancakes." Serve them forth with butter, syrup, jelly, and berries of your choosing.

Serving Size: 1/3 cup of batter makes one pancake. This recipe will make 7 pancakes.
