1 medium onion chopped4 cloves garlic crushed2 small red chillies finely chopped1 tb ground cumin2 tsp ground coriander4 tb tomato paste800g canned chopped tomatoes6 cups vegetable stock100g diced red or green capsicum400g canned sweet corn drained2 x 400g can butter beans drained and rinsed2 x 400g can red kidney beans drained and rinsed400g can chick peas drained and rinsedjalapeno peppers, sour cream and shredded cheese to serve
Soften onion in a non-stick pan, add garlic and spices and cook until fragrant. Add tomatoes and tomato paste and stir until warmed.
Combine all ingredients in slow cooker and cook on low 6-8 hours, high 3-4 hours or auto 9-10 hours. Makes 10 1 cup serves
