Quinoa

Ingredients
1 c quinoawater, at least 3-4 cups
Directions
In a dry pan, lightly toast quinoa over medium heat, shaking or stirring frequently to prevent burning. When done, remove from heat and put in a dish or fine strainer. Let cool, then rinse for 1 to 2 minutes (prevents bitterness). Put in a medium sized pot, well covered with water. Bring to boil, reduce heat (but continue to gently boil), cook for 20 minutes or until done. Strain to remove excess water, and serve.
