Candied Sweet Potatoes

Ingredients
6 medium sweet potatoes8 tbsp salted butter1 cup brown sugar, unpacked 1/2 cup white sugar1/2 bag mini marshmallows
Directions
1. Peel and cut sweet potatoes into large semi-uniform pieces. Add sweet potatoes, 4 tbsp butter and white sugar to water and bring to a boil. Cook for 40 minutes or until tender.

2. Add remaining 4 tbsp butter and brown sugar. Cover and simmer for 20 minutes.

3. Sprinkle marshmallows over the top, cover and simmer 5 more minutes or until marshmallows are diffused throughout the broth. Remove from heat and serve.
