L.R. sweet potato muffins

Ingredients
1 1/2 cups whole wheat flour1 cup sugar1/2 tsp. baking soda1 tsp. baking powder1/2 tsp. salt1 tsp. cinnamon1/4 tsp. nutmeg2 T. coconut oil1 1/4 cups mashed sweet potato2 eggs1 1/2 cups buttermilk1/3 cup chopped pecans1/2 cup chopped pitted dates
Directions
Preheat oven to 375. Coat muffin tins with nonstick spray. In a large bowl combine the dry ingredients. In another bowl combine everything else except the pecans and dates. Stir the wet ingredients into the dry. Add dates and pecans and mix just until combined. Divide into 19 muffin cups. Bake for about 25 minutes. Makes 19 muffins.
