0.34 cup Buttermilk, lowfat2.0 large Egg, fresh, whole, raw0.5 tsp Salt1.0 tsp Vanilla Extract0.33 1tsp Coconut Oil3.0 small (6" to 6-7/8" long) Banana, fresh2.0 tsp Baking Powder0.5 tsp Baking Soda0.5 cup, packed Brown Sugar1.0 cup Flour, white8.0 tbsp *Flax Seed Meal (ground flax)0.5 cup Whole Wheat Flour
Cream together until fluffy; eggs, butter, sugar, vanilla and bananas.
In a separate bowl, mix remaining dry ingredients and add to the creamed butter mixture alternating with the buttermilk. Mix on low spread until well blended. Stir in nuts and pour into a greased loaf pan.
Bake at 350 for 55 minutes for loaf or 25-29 minutes for muffins or in either case until knife inserted comes out clean.
Serving Size: 12th of the loaf or 1 muffin.
